Sentro Botanikos: An eco-haven to nourish your soul and appetite

A place where you can go to relax, recharge, and enjoy organic farm-made meals, and more.

Nourish your appetite with heart-warming, healthy food and your soul with the captivating environment — a sure way to get over the work-week stress.

The invigorating and lush surroundings of Sentro Botanikos.

It was one weekend when my family was introduced to this fledgling eco-farm and café in Alfonso, Cavite. It’s near to my in-law’s ArtFarm property also located in Alfonso.

The urged to eat good food for dinner had led us to Sentro Botanikos. It was getting dark and we didn’t find it right away the location. The signage was unnoticeable and we almost missed the gate leading to the homey restaurant. We even thought that the restaurant was closed. Just the same, we proceeded. As we alighted from the car, we were greeted with a tender breeze from the cold night air that filled the entire farm.

With my family and in-laws.

As my eyes wander, I found the facilities austere yet very relaxing, it makes you breathe with its wide-open spaces and surrounded by nature. The surprise is in the food they offer – only farm-based meals and farm-made products. Its principles are centered around community, sustainability, vegetarian and environmentally-friendly choices. They also started to produce farm-made food items for everyone to enjoy.

Appetizing Adobo ni Lola.
Delicious Palabok with seaweeds on top.

Our food choices for dinner included palabok, adobo ni lola, sisig, bulalo, and turon ala mode. All the dishes were delicious! But we were greatly surprised with bulalo, on how they made it so flavorful! Bulalo is normally made with beef shanks, and gives you a heavy feeling after a meal. I really did not know that a vegetarian bulalo can be so tasting and healthy! Most times, they said, they use a wheat/soy fillet as a replacement to “meat.”

And they also shared some farm-made products that make their dishes appetizing, like the vegan seasoning. I bought one bottle which will last for a month and plant-based M’chon sauce similar to an all-around sauce under the Solera Botanikos label.

Delectable Turon Ala Mode.

With its plant-based meals, Sentro Botanikos has been added to our list of go-to-restaurants when in Alfonso, Cavite. We are delighted to have discovered this new place, most especially beneficial to my hubby, who is a vegetarian for 10 years now. We are always on the lookout for similar establishments offering fresh, healthy, delicious, and vegan meals.

I am not a hardcore vegan, but because of my hubby’s influence, my daughter and I have learned to embrace a vegetarian lifestyle on a 50-50 ratio (meaning: we are semi-vegetarian and forgo pork, but still consuming chicken, beef, fish, and egg). When at home, we only cooked plant-based meals, and when we eat outside, that’s the only time that my daughter and I eat meat dishes.

It has been said that following a plant-based diet is healthy for our bodies and the environment. A vegan diet can be one of the healthiest ways to live. Plant-based diets should contain plenty of fresh fruits and vegetables, whole grains, beans, legumes, nuts, and seeds. Because vegan diets often rely heavily on these healthy staples, they tend to be higher in vitamins, minerals, phytochemicals, and fiber. Healthy vegan diets are abundant with vitamins B1, C, and E, folic acid, magnesium, and iron while also being low in cholesterol and saturated fats.

Homey-feel inside the restaurant cafe.

No wonder, every year more and more people are making the decision to go vegan, and for good reason! A big lifestyle change is easier to sustain if you wholeheartedly believe in your decision.

Good thing, more and more vegan restaurants are opening and catering to the growing health-conscious Filipinos.

Sentro Botanikos is located at 217 Buck Estate Road, Brgy. Buck Estate Alfonso, Cavite 4123. It is open from 12:00 noon until 9:00 p.m.

A gastronomic feast at Singapore Food Festival 2021

Back for its 28th year, SFF has gone hybrid for the first time and doubled in scale – inviting international foodies to dive into Singapore’s rich culinary landscape and rediscover the love for food.

 The Singapore Food Festival (SFF), one of the most highly-anticipated events on every foodie’s calendar, returns for its 28th edition over three weekends from 27 August to 12 September 2021 with the theme ‘Savour Singapore In Every Bite’. The only festival in Singapore dedicated to local cuisine and F&B talent, it continues to innovate, bringing foodies more than 50 gastronomic and drinking experiences on a hybrid platform. This is double the number[1] compared to last year’s virtual edition.

An exciting breadth of live masterclasses, both free-to-view and paid, will bring international audiences up close and personal with some of the most well-known chefs in Singapore’s culinary scene. Foodies can also work up an appetite through curated walking tours to indulge in stories of culinary heritage and invention; peel back the layers to uncover new flavors through recipe videos and exclusive food bundles, and explore Singapore through virtual experiences and docu-features.

Chilli Crab Sichuan-ation – Mala Chilli Crab Noodles.

SFF 2021 is a highlight of SingapoReimagine[2], a campaign that invites travelers to experience new possibilities that redefine what Singapore has to offer. In line with SingapoReimagine, SFF spotlights the diverse culinary culture and the people who keep it alive, by offering global foodies the opportunity to reignite passions and experience travel anew through our hybrid offerings.

Ms. Serene Tan, Director of Retail and Dining, Singapore Tourism Board (STB), said: “True to its proud tradition, Singapore Food Festival 2021 showcases our vibrant culinary culture by spotlighting our people – from established and rising chefs to everyday culinary heroes, wine experts, and mixologists. This year, we are excited to bring SFF to global audiences, inviting them to indulge in Singaporean cuisine and learn more about our multi-cultural heritage through food. More than ever, SFF is a testament to the innovation in Singapore’s culinary scene and our reputation as a global culinary capital.”

Program highlights

This year’s festival lineup comprises four components: Live Masterclasses, Virtual Food Experiences, Partner Events and Workshops, and SFF food merchandise.

Tong Heng paired with Kim Guan Guan Coffee – Ana and Jason.

The Live Masterclasses offer viewers the rare opportunity to learn from some of the best chefs, bartenders, and food personalities in Singapore’s culinary scene. Festival-goers can join the nine free-to-view live masterclasses hosted on SFF 2021’s Facebook page or sign up for intimate and interactive sessions with renowned chefs by joining another nine pay-to-view live masterclasses. The thrilling line-up of features top names in the F&B scene in Singapore and around Asia, including:

  • MasterChef Singapore 2018 judge Bjorn Shen of Artichoke and Le Cordon Bleu-trained chef JP Anglo of Sarsa from the Philippines, who will be presenting a four-hand collaboration with their rendition of an oyster omelet;
  • Chef Lim Hoe Gern of Laut and celebrity chef Thitid Tassanakajohn, the creative mastermind behind Thailand’s one-Michelin star Le Du with their four-hands collaboration dish – the umami-laden Prawn Raja;
  • Hawkerpreneur Douglas Ng of the Fishball Story will reveal the secrets behind his handmade traditional Hakka yong tau fu (traditional Hakka dish consisting primarily of tofu filled with ground meat mixture or fish paste);
  • Chef Jeremy Gillon of one Michelin-starred restaurant JAG will demonstrate the process of making tender ravioli from scratch (pictured right);
  • Chef Maxine Ngooi of Tigerlily Patisserie will bring a twist to the babka loaf, with a stuffing of aromatic buah keluak rempah (spice blend of the seeds of the buah keluak fruit);
  • Pastry expert Mohammed

Al-Matin of Le Matin Patisserie will present a unique goreng pisang (banana fritter) dessert.

Selected masterclasses will also offer ingredient boxes and food bundles that participants can purchase and get delivered to their doorstep in Bangkok, Chengdu, Manila, and Singapore, allowing them to cook up a storm with their favorite food talent on screen for a truly engaging experience.

As part of SFF, there will also be Virtual Food Experiences in interactive formats for international festivalgoers. Take a deep dive into the ins-and-outs of innovative businesses such as Kok Fah Farm through a docu-feature, which takes foodies on a tour around the soil and hydroponics farm, and recipe videos like Kitchen Insider: Sustenir, which educate foodies on modern farming in Singapore, suggesting ways to incorporate local produce into everyday dishes, supercharging it with nutrition. Additionally, foodies can look forward to a journey of rediscovery as they feast their eyes on delectable dishes in the virtual food tours of Little India and Tiong Bahru presented by popular food host, Nikki Muller.

Some of these virtual tours will also be presented in physical formats as part of Partner Events held across the island. Foodies who love exploring can rediscover the rich culinary heritage ingrained in our land and immerse in idyllic foodie experiences through curated walking tours. Learn more about the colorful spices that go into Indian dishes at the Heritage Tour of Little India, or embark on the Kim Guan Guan Factory Tour, to uncover the history and heritage behind the brewing and roasting of one of Singapore’s oldest kopi (coffee) suppliers.

Good Food Trio: Sinigang, Pares, and Lomi

These three best-tasting Filipino dishes will surely satisfy your cravings for good food. Whether dining at home or al fresco in an upscale restaurant, Filipino food will always be present and enjoyed by every member of the family, not just here but worldwide.

  • Sinigang: Best vegetable soup in the world

Savor the all-time favorite Sinigang, hailed recently as the best vegetable soup in the world on the food website TasteAtlas, which promotes cuisines from different cultures around the world. The website announced its vegetable ranking list via Facebook, last August 2.

Sinigang received 4.8 out of 5 stars, clinching the top spot from other “best” soups, namely Tukey’s mercimek corbasi and Lithuania’s saltibarsciai. The soup base of Sinigang makes it stand out from the rest of the list.

Courtesy: TasteAtlas

“With its sour lightness perfectly matching the harsh tropical heat of the country, Sinigang is a unique soup that is a true representative of Filipino cuisine,” TasteAtlas said. Although, it didn’t indicate which kind of Sinigang is the best (pork, fish, or chicken, among others).

It also mentioned the ingredients, “Sinigang is a sour Filipino soup consisting of sampalok (fruits of the tamarind tree), water spinach, green pepper, cabbage, broccoli, eggplant, diced tomatoes, sliced onions, ginger, green beans, water, and salt. The basic broth usually consists of rice washing, with the addition of a souring agent. Other ingredients such as pork, fish, milkfish, shrimp, chicken, or beef may also be added to the soup.” It added, “Sinigang is traditionally served hot and steaming as a main dish, with rice as its accompaniment.”

Sinigang sa Hipon. Courtesy: TasteAtlas

With the popularity of the dish, “new variations replace sampalok with guava or raw mango, while different regions have their own techniques,” the website stated. It has become an often seen dish on special occasions such as birthdays or weddings.

The website also mentioned the restaurants with good Sinigang: Romulo Café, Sentro 1771, Fely J’s Restaurant, Manam Comfort Food, and Max’s Restaurant.

If we may add to the list, we also recommend the unique and mouth-watering versions of Sinigang sa Beef Buko of The Harvest Hotel in Cabanatuan City, and the appetizing Silang Sinigang of Tia Belle’s Tagaytay. Both are rich in flavor and loaded with fresh ingredients.

  • Lifetime “Pares” for Hidilyn Diaz

Pares also known as beef pares, “is a term for a serving of Filipino braised beef stew with garlic fried rice, and a bowl of clear soup.” It also refers to “any dish that is cooked in the manner reminiscent of the ‘asado-style.’”

Pares Retiro, a Filipino restaurant known for its great-tasting beef pares, mami, goto, and putok batok spicy bone marrow, has also extended recognition to our Tokyo Olympics Gold medallist, Hidilyn Diaz by giving her a lifetime Classic Pares.  On their FB page, they shared the poster with the caption “A true partner for life – true Filipino food goes hand in honoring our champion, Hidilyn Diaz!”

“Here at Pares Retiro, we improved the traditional food we have all come to know and elevated it to heavenly standards. Mahirap ba paniwalaan? Tara’t tikman ang langit!” stated on their website.

Pares Retiro also offers Filipino cuisine such as Pancit, Sizzling Sisig, Lechon Kawali, Kare-Kare, and mouth-watering desserts like Turon De Leche, Saba Con Yelo, and Halo-Halo.

It opened its very first branch in Quezon City in 2007. Their signature food product is paired with fried rice, chili sauce, and hot beef soup.

  •   A hearty Mucho Lomi

Your trip to Tagaytay will not be complete without stopping by Tia Belle’s Tagaytay. Never miss the chance to partake in one of its bestselling noodle dishes – the special Mucho Lomi. This rainy season and even on regular days, this Chinese-influenced dish is so popular, with a volume of orders for dine-in and take-out.

Mucho Lomi of Tia Belle’s Tagaytay

What makes this dish a favorite? “Its rich, flavorful broth, full ingredients, hindi tinipid, and always served hot,” said Evelyn Wise (a.k.a Tia Belle’s) the hands-on owner of the Filipino restaurant.

Many regional varieties are thickened with flour or eggs and incorporate pork or chicken, sliced pork liver, and a variety of vegetables, according to TasteAtlas.

Tia Belle’s owner is generous to share the recipe of Mucho Lomi for you to try cooking at home, particularly during this quarantine period. To order, visit: https://www.facebook.com/belle.tia.1

Rainy Day Comfort Food

Cooking is one of the rainy day activities that we can do as a form of bonding at home. The joy of sharing good food with our loved ones is truly incomparable.

These two dishes – Champorado and Arroz Caldo —  are what we always crave during the rainy season – our comfort food, so to speak. The cuddle weather makes us wanting for dishes that are hot, delicious, and with a thick creamy soup. Just imagine enjoying a warm bowl of these flavorful dishes.

We used Adlai rice for the arroz caldo and champorado recipes. Adlai rice is the healthier choice — gluten-free, high in dietary fiber, and rich in protein and calcium. It also contains minerals such as iron and has a low glycemic index that means that it has low sugar levels and is good for those who are diabetic.

Filipinos love rice; it’s a staple in every family’s menu. But with Oh Crop! Adlai rice no need to feel guilty every time you have that extra serving of Arroz Caldo and champorado. It will keep you full longer and will make you feel less hungry after hours compared to regular glutinous rice.

According to Tribune World of Flavors columnist Dolly Dy-Zulueta, she was surprised at how economical Oh Crop! Adlai rice when she cooked Arroz Caldo recently. “I was surprised at how matipid Adlai is. You need only a little because it keeps absorbing the liquid that you cook it in so that it doubles in amount. “

It’s important to be health-conscious now that we are in a pandemic. Health is wealth and as long as you take care of yourself by staying fit and eating right, you’ll be able to save yourself from hospital and medicine bills later on. More than ever, we have to make sure that we, and our families, are making efforts to stay healthy. This isn’t the time to let up on our commitment to a healthy lifestyle.

Are you craving for Hainanese chicken rice?

Here are our food discoveries on this popular dish here and abroad.

In terms of chicken dishes, one of the most widely known is Hainanese chicken rice. What makes this dish so special is its delectable taste – the poached chicken meat and seasoned rice. No wonder travelers from around the world have all the rage for this iconic dish.

  • Tian Tian Hainanese Chicken Rice

If you’re planning a trip to Singapore, post-pandemic world, make it part of your itinerary to experience Singaporean cuisine. This small, but progressive and important island nation located just south of Malaysia not only offers modern tourist attractions, and impressive skyscrapers, but is also famous for Hainanese chicken rice, one of the national dishes of Singapore. It is being widely available in most food courts and hawker centers around the country.

“Variants of the dish are also seen throughout Southeast Asia, particularly in Malaysia, where it remains a culinary staple,” according to an online source.

Tian Tian Hainanese Chicken Rice stall. Personal photo during our previous trip to Singapore.

Tian Tian Hainanese Chicken Rice is probably Singapore’s most famous chicken rice stall located at Maxwell Food Centre. As seen from our last visit in past years, it had more tourists than locals queuing up for a plate of this popular dish. You just need to be patient, and in no time, it will be your turn to order.

It was worth the visit because the dish was really delicious – both the chicken meat and the rice were cooked to perfection. Per order of the dish was like Php250.00 – Ph350.00 in our local currency.

Even the late Anthony Bourdain said that the chicken rice was so fragrant and delicious that it could be eaten on its own.

  • Homeboy Hainanese

The pandemic may have restricted our movement, and planning a trip to Singapore may not be ideal at the moment. But this won’t stop us from tasting this dish in Manila, and at the comforts of our home.

An interesting discovery is Homeboy Hainanese, which offers and delivers Hainanese chicken rice. Though, still new in the food business, it’s getting a significant following for its quality and healthier take on the famous dish.

The sauces are made from scratch and are very flavorful – soy sauce, ginger, and chili. Courtesy: Homeboy Hainanese

It was a delight to have discovered it through a lady client. The delivery came just in time for lunch and was freshly packed. The food pack consisted of chicken fillet which was very tender; rice (an Oh Crop Adlai rice best for dieters as well); and the sauces are made from scratch and are very flavorful – soy sauce, ginger, and chili.

To fully enjoy the dish, I dabbed all three sauces in one bite of chicken meat and rice. I was very satisfied with how the dish was cooked. Indeed, it was a tummy-filling Hainanese experience! You need not go to Singapore to try it. If you want your order to be consumed later, you can store it in the refrigerator, then, reheat it in the microwave at 600w for 30 seconds.

A mouth-watering dish and satisfying dining experience can definitely fulfill any food cravings.
