Our recent stay was made truly unforgettable by an exceptional dining experience that elevated every single meal. Breakfast was a wonderful blend of sweet and savory—from light, crispy churro waffles and fluffy pancakes to comforting local favorites like hearty bangsilog and rich arroz con tapa.

Lunch was an absolute feast featuring a wonderfully rich classic beef kare-kare, a bright and refreshing ensalada de pollo, a surprisingly comforting four-cheese quesadilla, and a deeply flavorful, comforting bowl of kansi.

Dinner kept the momentum going strong with a complex, perfectly spiced chicken mole, alongside crowd-pleasers like their savory four-cheese quesadilla and a fresh, bubbly four-cheese pizza. From morning to night, every dish was thoughtful, delicious, and a highlight of our trip.
From early morning coffee to late-night cocktails, expect a continuous celebration of flavor and creativity. Catch live bands every Friday and Saturday to set the beat for memorable food, great company, and electric nights.

Spearheaded by its current Operations Manager Nhess Ilustre, the restaurant delivers a delightfully executed Filipino-Mexican fusion concept. Former Executive Chef Noy Rodriguez takes pride in sourcing fresh ingredients from local Tagaytay markets while customizing traditional elements like tortillas to create vibrant, balanced flavors.

In Conversation with Owner Melvin Canong: From Dreamer to Hotelier
During our stay, we had the privilege of sitting down with the owner, Melvin Canong, who operates The Strype Hotel in partnership with Approche Hospitality Management.
“I originally graduated with a degree in Electrical Engineering and worked in the medical business sector,” Canong reflects with a warm smile, on the journey to opening the hotel. “Later on, I actually worked as a kitchen steward. But through it all, I harbored a simple dream: to own and run a hotel.”

That dream began taking concrete shape in June 2025 when Eppi Legaspi of Approche Hospitality Management introduced him to a charming property in Tagaytay. Deeply inspired by the site, Canong officially opened The Strype Hotel on September 18, 2025, and launched full operations on October 1, 2025.
“I want everybody to be happy. Gusto ko masarap ang pagkain, and that the majority of our guests leave fully satisfied with their food and stay,” Canong said on his philosophy and hospitality. “We exist not just as a business, but to help others—providing meaningful employment to our 22 dedicated local staff members.”
Reflecting on reaching his first year milestone, Canong shares a sense of deep fulfillment. “Seeing guests feel at home here makes every bit of effort worth it,” he said. The future of The Strype Hotel is bright and expansive. Plans are already underway to add new guest rooms, a fully equipped gym, a wellness spa, a boutique, a pickleball court, and a heated swimming pool.

Furthermore, Canong envisions expanding The Strype brand to the Visayas, with plans to open future properties in Capiz, Iloilo, Guimaras, and Antique. When asked about his secret to success in turning a simple dream into a flourishing reality, Canong answers without hesitation: “Prayers, dedication, and love.”
