SMHCC’s Iconic Hotel Wins Big in Tagaytay Food Festival’s Creative Bulalo Challenge 

Taal Vista Hotel has proudly taken home the Grand Champion title in the Creative Bulalo Challenge held during the Tagaytay Food Festival at Sky Ranch Tagaytay on 3 August 2025.

Representing the hotel was its talented culinary team led by Executive Chef Jayme Natividad and his team – Executive Sous Chef; Chef Godfrey Vincenz Dalisay, Sous Chef; Chef Flagyl Suedad, Chef de Partie; Cook Raymond Calinawan, Cook II; and Mr. John Mark Ambion, Steward.

Their winning creation reimagined the classic Bulalo with a bold and flavorful twist, inspired by Pozole, a traditional Mexican stew made with hominy (corn kernels) and meat, known for its rich broth and vibrant spices. This unique fusion dish captivated the judges with its balance of familiarity and innovation. By infusing the rich, comforting flavors of Bulalo with the spices and hominy-based elements of Pozole, the Taal Vista Hotel team created a dish that was both nostalgic and refreshingly original.

“Pozole is a well-loved comfort dish in Mexico, much like Bulalo is for us Filipinos. We were curious to see how both dishes could harmonize, and it turned out to be a perfect match,” shared Chef Jayme Natividad. “I went around and tried a number of dishes and I found them to be really good and creative at that. Personally, I had no expectations since taste is relative. We just wanted to offer something that would spark curiosity and comfort at the same time.”

As part of the celebration of this meaningful win, Taal Vista Hotel is proud to offer the award-winning Bulalo Pozole at Veranda restaurant’ a la carte menu.

The Creative Bulalo Challenge gathered a total of 13 participating hotels and restaurants from Metro Tagaytay, each showcasing their own unique interpretations of the beloved dish. The event was the closing highlight of Tagaytay Food Festival’s second year, an initiative that celebrates the city’s rich culinary scene and promotes local tourism through food and cultural experiences.

Tagaytay Food Festival 2025 is back this weekend at Taal Vista Hotel

Now in its second year, the Tagaytay Food Festival returns this weekend with a deeper purpose: to remind us of the power of food to bring people together. In a world that’s increasingly fast-paced and disconnected, this year’s theme, “Food That Binds,” puts the spotlight on food as a medium for gathering, storytelling, and meaningful connection.

Organized by Chef Rhea SyCip, co-founder of The Fatted Calf in Tagaytay, in partnership with SM Hotels & Conventions Corp., this year’s festival takes place at Taal Vista Hotel, bringing together a vibrant mix of hotels, restaurants, chefs, and producers to celebrate culinary heritage and innovation. The celebration opens on Friday, 18 July 2025, with the Trade Place Farmers Market from 8:00 AM to 5:00 PM at the Covered Terrace. At 5:00 PM, guests can enjoy the lively Drinks Fest, followed by the much-anticipated Grand Tasting at 6:00 PM in Ballroom 1 and 2. Tickets are priced at Php 3,950 per person.

De Belen, Senior Operations Manager – Food & Beverage of SM Hotels and Conventions Corp., who will present a talk titled, “Plate for the Planet – Sustainable Diner: A Key Ingredient for Sustainable Tourism.” At 12:00 NN, guests are invited to indulge in a Heritage lunch buffet at Veranda Restaurant for Php 1,780 per person, offering traditional Filipino dishes in a nostalgic setting.
