Belmont Hotel Manila Celebrates Filipino Food Heritage through Pamana, Featuring the Dishes of Chef Rey Parreño II

Belmont Hotel Manila officially unveiled the third Pamana collaboration, a culinary advocacy that honors Filipino food heritage through heirloom recipes, regional flavors, and stories passed down through generations, during an intimate media gathering at Café Belmont.

Pamana reflects the hotel’s commitment to cultural preservation and sustainable dining experience through dishes crafted with passion and inspired by the diverse culinary heritage of the Philippines. In this most recent collaboration, Belmont Hotel Manila featured the rich flavors of Panay Island, particularly the Ilonggo cuisine prepared by the Executive Chef of Belmont Hotel Manila, Chef Dan Jason Acido and guest chef, Chef Rey Parreno II.

An advocate of traditional and contemporary Ilonggo cuisine, Chef Rey delighted guests with some of the beloved Ilonggo dishes such as Bordon Mechado, a slow-cooked beef dish rich in heritage flavors; Piangang Manok, a traditional Mindanaoan chicken dish infused with burnt coconut and spices; and Inadobadong Apahap, a refined take on the classic adobo featuring locally sourced Asian sea bass.

“These dishes represent different regions, memories, and cooking traditions from across the Philippines,” said Chef Rey Parreño II. “By sharing Bordon Mechado, Piangang Manok, and Inadobadong Apahap, we hope to honor the people and stories behind these recipes and keep them alive for the next generation.”

Guests can continue to enjoy Chef Rey Parreño II’s featured dishes through the Pamana Weekend Dinner Buffet at Café Belmont, available every Friday and Saturday, from 6:30 PM to 9:30 PM, for PHP 1,700.

“Pamana is more than a dining experience for us. It is our way of honoring Filipino food heritage by celebrating heirloom recipes, regional flavors, and the stories that have been passed down through generations,” said Mayann Malapote, Hotel Manager of Belmont Hotel Manila. “Through initiatives like this, we hope to create moments that bring people together and deepen appreciation for our culture.”

The Journalism Studies Association of the Philippines (JSAP) conferred its highest distinction on veteran journalism educator Ben Domingo Jr. during the JSAP National Conference 2025, held on Dec. 9 at the Polytechnic University of the Philippines (PUP) in Manila.

In his honorary membership citation, Domingo was recognized for his exemplary contributions to journalism education and community-based media practice. Domingo has taught journalism, communication, and development communication at PUP, the University of the Philippines Diliman, and Central Luzon State University. Domingo is acknowledged as the “Father of Barefoot Journalism” (“Peryodistang Yapak”) for pioneering a grassroots-oriented, community-based approach to journalism education and practice.

Beyond academia, Domingo has also built a distinguished career in sports and sports media, becoming the first Filipino Accredited International Referee of the International Badminton Federation (now the Badminton World Federation) in 1997 and the first Filipino Certified International Referee of the Asian Badminton Confederation in 2004. His media work includes serving as a feature writer for World Badminton Magazine (London), a long-time sports columnist, a sportscaster for PTV4/RPN9/IBC13, and director for media relations of the Philippine Badminton Association.

CCP Simbang Gabi Celebrates Faith, Tradition, and Community

Embracing the rich tradition of Filipino Catholicism, the Cultural Center of the Philippines (CCP) will once again host its annual Simbang Gabi from December 16 to 24, 2025, continuing a cherished holiday observance that gathers communities in prayer, reflection, and cultural celebration.

This year’s observance features nine dawn masses (Misa de Gallo) at 5am, culminating in the Christmas Eve Mass (Misa de Aguinaldo) on December 24 at 8pm, both happening at the CCP Annex Parking Lot along Vicente Sotto Street at the CCP Complex.

As one of CCP’s most enduring holiday traditions, the Simbang Gabi presents not only a spiritual journey, but also a meaningful convergence of culture, devotion, and artistic expression.

CCP Simbang Gabi last 2024.

The Hermanas and Hermanos of the Misa de Gallo include the Philippine Navy, Camus-Corrado, the Philippine International Convention Center (PICC), Manila Broadcasting Company (MBC), and Seascape.

On December 24, the CCP will hold special pre-show activities, starting at 7pm. Following the nativity story, the pre-show elevates both the solemnity and the joyous spirit of the Misa de Aguinaldo.

The Philippine Madrigal Singers headlines the celebration, along with soprano Myramae Meneses and other equally exceptional artists and performers. Their participation underscores CCP’s commitment to preserving cultural heritage by integrating the arts into communal traditions.

“This season brings our community together in faith and creativity. Through Simbang Gabi, we celebrate not just the spirit of Christmas but also the artists and cultural workers whose passion uplifts our traditions,” said CCP President Kaye Tinga.

The CCP invites everyone to join the Simbang Gabi and partake in the celebration of unity, gratitude, and hope that defines the Filipino Christmas.

Admission to all masses is free, and attendees are advised to arrive early. The Christmas Eve mass will be officiated by Fr. Mario Sobrejuanite and livestreamed on the CCP Facebook page.

Tableya, Gawad Tsokolate ng Pilipinas: Philippine Tableya Competition Launches at Ateneo, Boosts Push for Geographical Indications for Tableya and Cacao

The Mama Sita Foundation (MSF), in partnership with the Cultural Heritage Studies Program of Ateneo de Manila University, successfully launched Tableya, Gawad Tsokolate ng Pilipinas: Philippine Tableya Competition on 25 October 2025 at the Le Cordon Bleu campus of Areté, Ateneo de Manila University.

The event brought together students, faculty, members of the academe, food historians, judges, and heritage and culinary enthusiasts for an afternoon celebrating one of the Philippines’ most enduring food traditions. This inaugural activity also serves as a key milestone in ongoing efforts to secure Geographical Indications (GI) recognition for particular ‘terroir’ of cacao and tableya in the Philippines. Terroir has been translated as ‘kapookan’ by food writer Ige Ramos, referring to both natural and cultural factors that make the G.I. products unique.

Designed as a demonstration event ahead of a planned nationwide competition in 2026, the Tableya Awards showcased eight tableya brands selected by students under Dr. Fernando Zialcita’s Cultural Heritage course, in a hot chocolate drink competition curated by cacao expert Estela Duque. The judging panel featured respected leaders in the food and culture sectors, including Felice Sta. MariaOscar MejiaCarla VillanuevaRosario Juan, and Jancy Kilayko.

“The Philippine Tableya Competition is more than a culinary showcase—it’s a cultural and agricultural advocacy,” organizers noted. GI protection for tableya and cacao is expected to strengthen value chains, elevate production standards, and support the farming communities behind these heritage ingredients.

Guests were treated to a curated merienda featuring Mama Sita’s Heirloom Rice Champorado and Heirloom Rice Balatinaw Pinipig, highlighting the diversity and depth of local agricultural traditions. The Mama Sita Foundation’s participation reflects its continued commitment to promoting terroir, responsible sourcing, and the preservation of heirloom crop value chains.

This initiative was supported by Ateneo’s John Gokongwei School of Management and Le Cordon Bleu–Ateneo, institutions that bring academic rigor and culinary excellence to the program. Together with the Mama Sita Foundation, they aim to scale the Tableya Competition nationwide in 2026, strengthening research, advocacy, and community engagement connected to the country’s GI aspirations.

The event marks the beginning of a sustained collaboration to elevate Philippine tableya—honoring its origins, empowering its producers, and securing its rightful place in both local and global markets.

Island Serenity Redefined: Discovering the Private Charms of Belmont Hotel Boracay

Our time at Belmont Hotel Boracay was marked by comfort, privacy, and top-notch service. Whether you’re seeking a peaceful retreat or a base for island adventures, Belmont delivers an unforgettable Boracay escape.

Our recent trip to Boracay was nothing short of extraordinary, thanks largely to our stay at the Belmont Hotel Boracay, nestled within the serene Boracay Newcoast. From seamless airport transfers to the inviting private beach, every detail contributed to a relaxing and memorable getaway.

Seamless Transfers and Warm Welcome

Our journey began with a smooth transfer arranged by the Belmont Hotel. Upon landing at Caticlan Airport, a courteous hotel staff greeted us, handling everything from luggage to terminal transfers. We were ushered onto a comfortable shuttle and then a boat, skipping the usual crowds. This efficient arrangement meant we arrived at the hotel refreshed and ready to enjoy our holiday, without the stress that sometimes comes with island travel.

Sitting pretty in the hotel lobby’s Christmas Tree.

Upon arrival at Belmont, the hospitality became instantly apparent. The staff greeted us with warm smiles and a refreshing welcome drink. The check-in process was swift and hassle-free, setting the tone for the rest of our stay.

Modern Comforts and Thoughtful Amenities

Our room was a cozy haven, tastefully decorated with modern furnishings and a balcony overlooking the pool and lush gardens. The beds were plush, ensuring restful sleep each night. We especially appreciated the thoughtful touches—complimentary water, high-speed Wi-Fi, and a smart TV for winding down after a day at the beach.

Belmont’s amenities cater to every type of traveler. The outdoor swimming pool was a favorite spot, perfect for a morning dip or a lazy afternoon under the sun. For those seeking rejuvenation, the hotel spa offered a range of massages and treatments. Fitness enthusiasts will appreciate the well-equipped gym, while business travelers can utilize the meeting rooms and business center.

One of the highlights was the hotel’s private stretch of beach at Boracay Newcoast. Unlike the bustling main beaches, Belmont’s beach was tranquil and uncrowded, providing a sense of exclusivity. We enjoyed lounging on the sunbeds, snorkeling in crystal-clear waters, and sipping cocktails from the beach bar. The privacy made it easy to unwind, away from the usual tourist crowds.

The Boracay Keyhole tour, is a unique experience that our family enjoyed. Located just a short walk or shuttle ride from the Belmont Hotel, the Keyhole is a striking natural rock formation with a dramatic opening carved by the sea. Standing before it, we were awed by the sheer size and rugged beauty of the limestone cliffs, with waves crashing through the archway and the endless blue of the ocean beyond. The site is not only a fantastic photo spot—especially at sunrise when golden light streams through the opening—but also a place to marvel at nature’s artistry, making the visit both fun and meaningful. It was a memorable family outing that added a touch of adventure and wonder to our Boracay getaway.

Megaworld Hotels & Resorts (MHR) celebrated this year’s Thanksgiving by supporting the Ati Komunidad of Boracay as they took on the challenge of mastering nito weaving, a traditional Filipino craft. Anchored on the theme “Weaving Heritage, Planting Hope,” the project underscores MHR’s commitment to preserving Filipino craftsmanship while creating sustainable income opportunities for indigenous communities.

The Ati Komunidad is the chosen partner community of Boracay Newcoast properties under the MEGreen Mindful Stay initiative.

“The Ati people are the original caretakers of Boracay. By nurturing livelihood opportunities for them, we honor their legacy and help ensure that progress on the island includes them. They are the heart of this island long before it became the destination we all know today. By investing in programs like nito weaving, we hope to uplift their lives and give back to the community that has given us so much,” Cleofe Albiso, Managing Director of Megaworld Hotels & Resorts, said.

Celebrating Heritage and Craftsmanship at Chancellor Hotel Boracay

Each year, MHR chooses a beneficiary community to honor during its Thanksgiving tradition. This year, the group extends its support to the Ati community in Boracay. As part of the initiative, MHR hosted a 10-day nito weaving training and graduation in collaboration with the Department of Trade and Industry (DTI). The training was held at the Ati Village beginning November 10, 2025 and gathered 19 Ati participants eager to learn the craft from Francia Escote, an accredited DTI trainer whose own journey began as a student in similar workshops. Today, Escote runs her own brand, Franz Handicrafts, and now teaches others how to turn this heritage craft into a sustainable livelihood.

The training culminated on November 21 during MHR’s annual Thanksgiving celebration at the soon-to-open Chancellor Hotel Boracay. Top MHR executives and the Provincial Director of DTI-Aklan, Mr. Romel Amihan, personally awarded certificates to all 19 graduates. All participants were honored and given the chance to showcase their handcrafted nito creations.

Part of the Thanksgiving celebration is the introduction of MHR’s MEGreen Mindful Stays, the unified sustainability stay program designed for today’s rising breed of conscious travelers who seek meaning and positive impact in every journey, in which the Ati Komunidad is the partner community of Boracay Newcoast properties.

19 members of Ati Komunidad actively participated in the 10-day nito weaving training organized by Chancellor Hotel Boracay.

“We all know that nito is flexible, durable, and naturally beautiful, just like the Ati,” said Maia Israel, Area General Manager of Boracay Newcoast properties. “We see in you the same resilience and hard work that continue to thrive despite changing times. As vanguards of Filipino culture and heritage, MHR hopes to help preserve the art of nito weaving. That is why we partnered with DTI-Aklan, who guided us in learning this skill, which can also serve as an additional source of livelihood.”

Love for Country Shines

Nito weaving, a tradition rooted deeply in Filipino and indigenous artistry, uses the strong and glossy nito vine to produce baskets, placemats, trays, bags, hats, jars, and other lifestyle pieces. Aklan is home to many nito artisans, and its weaving industry continues to thrive locally and internationally.

The practice is both a livelihood and a social activity. In the past, women once gathered to weave as they bonded with family, often passing on the skill to their daughters through shared moments of crafting. One Ati trainee fondly recalled weaving vines into baskets with her mother as a child. By reviving nito weaving, MHR helps ensure that this timeless Filipino craft continues to be celebrated by future generations.

This initiative mirrors MHR’s Circle of Happiness pillar, Love for Country, which champions the preservation and celebration of Filipino culture and heritage.

Through this initiative, Megaworld Hotels & Resorts hopes to open new doors for the Ati Komunidad, connecting them to potential buyers, local retailers, and exporters who continue to see the value and beauty of handwoven nito products. May this inspire more people to discover their work and, in their own way, help keep this meaningful craft alive.
