In terms of chicken dishes, one of the most widely known is Hainanese chicken rice. What makes this dish so special is its delectable taste – the poached chicken meat and seasoned rice. No wonder travelers from around the world have all the rage for this iconic dish.

  • Tian Tian Hainanese Chicken Rice

If you’re planning a trip to Singapore, post-pandemic world, make it part of your itinerary to experience Singaporean cuisine. This small, but progressive and important island nation located just south of Malaysia not only offers modern tourist attractions, and impressive skyscrapers, but is also famous for Hainanese chicken rice, one of the national dishes of Singapore. It is being widely available in most food courts and hawker centers around the country.

“Variants of the dish are also seen throughout Southeast Asia, particularly in Malaysia, where it remains a culinary staple,” according to an online source.

Tian Tian Hainanese Chicken Rice is probably Singapore’s most famous chicken rice stall located at Maxwell Food Centre. As seen from our last visit in past years, it had more tourists than locals queuing up for a plate of this popular dish. You just need to be patient, and in no time, it will be your turn to order.

It was worth the visit because the dish was really delicious – both the chicken meat and the rice were cooked to perfection. Per order of the dish was like Php250.00 – Ph350.00 in our local currency.

Even the late Anthony Bourdain said that the chicken rice was so fragrant and delicious that it could be eaten on its own.

  • Homeboy Hainanese

The pandemic may have restricted our movement, and planning a trip to Singapore may not be ideal at the moment. But this won’t stop us from tasting this dish in Manila, and at the comforts of our home.

An interesting discovery is Homeboy Hainanese, which offers and delivers Hainanese chicken rice. Though, still new in the food business, it’s getting a significant following for its quality and healthier take on the famous dish.

It was a delight to have discovered it through a lady client. The delivery came just in time for lunch and was freshly packed. The food pack consisted of chicken fillet which was very tender; rice (an Oh Crop Adlai rice best for dieters as well); and the sauces are made from scratch and are very flavorful – soy sauce, ginger, and chili.

To fully enjoy the dish, I dabbed all three sauces in one bite of chicken meat and rice. I was very satisfied with how the dish was cooked. Indeed, it was a tummy-filling Hainanese experience! You need not go to Singapore to try it. If you want your order to be consumed later, you can store it in the refrigerator, then, reheat it in the microwave at 600w for 30 seconds.

A sunshiny career for Sunshine Dizon

“Whatever I do, I always give my best,” she related from a previous interview, “because not everyone is given a chance to be in showbiz.”

With her recent transfer to Kapamilya Channel (after a 25-year stay with rival GMA-7), veteran actress Sunshine Dizon is determined to stay and excel further in show business. She is set to star in the upcoming teleserye Marry Me, Marry You alongside thespians Paulo Avelino and Janine Gutierrez.

True to her name, Sunshine, in-person exudes a sunshiny disposition. She likewise, sounds very positive about her future. Having spent her early years in show business, Sunshine has acquired the look and attitude of a veteran. “Whatever I do, I always give my best,” she related from a previous interview, “because not everyone is given a chance to be in showbiz.”

An early entry in showbiz

Sunshine had an easy entry into show business because her mom Dorothy was a movie producer. As early as when she was three years old, her mom’s showbiz colleagues had convinced her to include Sunshine in the picture God’s Little Children, her first movie project. Her mom agreed for Sunshine to try her luck in showbiz.

Her mom didn’t go wrong because at a very young age Sunshine has made a mark in the industry. At 12, she bagged the much-coveted Best Child Actress Award from FAMAS. At 13, she became a favorite endorser in commercials. She is hopeful one day she might be able to achieve the status of her idols, Nora Aunor, Vilma Santos, and her all-time favorite American actress, Jodie Foster.

Acting-wise, Sunshine shared that she has matured through time. “All the films and shows that I did were all learning experiences.” She is best remembered for her outstanding portrayals in past TV series Ika-6 na Utos, Magkaagaw, Encantadia, and many more to mention.

Fondest childhood memory

Her fondest childhood memory was her trip back to the country from the United States when she failed to bring home with her the giant stuffed toy bear she purchased. “The flight attendants didn’t permit me to carry it on the plane. I threw tantrums. I told them that I would call 911 for child abuse. When I remember that incident, I just realized how stubborn I had been,” recalled the 37-year-old actress.

In private, Sunshine is a homebody and a bookworm. “Magala ang mga mata ko,” she said. “I’m the kind of person who will think a hundred times before I do something. Kaya siguro madalas sumakit ang ulo ko.”

Supportive family

What she values most in life is her family. “Because not everyone can have a family like the one I have, they’re always there for me and they are very supportive of my showbiz career. In the intriguing world of show business, they keep me sane.”

Sunshine is the youngest in a brood of three. She is very close to her other siblings, Richard and Chowtie; and to her mom Dorothy and dad Isagani.

Now that she’s a parent herself, she makes sure to always spend quality time with her two children. It has been an open book about how her past marriage turned out, but despite the chaos and drama, she maintains a good relationship with her estranged husband Timothy Tan for the sake of their children.

Both in reel and real life, Sunshine continues to shine and sounds very optimistic about what the future holds her.

Former President “Noynoy” Aquino passes away

Former President Benigno “Noynoy” Aquino III has passed away this morning, June 24, due to renal disease secondary to diabetes. He was 61.
Aquino served as the 15th president of the Republic of the Philippines from June 30, 2010 – June 30, 2016. He was the only son of late former president Corazon C. Aquino and late former senator Benigno “Ninoy” Aquino Jr.
Aquino will be remembered as “a simple public servant,” who committed his life to serve his country and his people.

Jodi Sta. Maria knows what she wants and is serious about her job

“It’s rare that one is given a chance to be in show business. Work hard and make the most of it because you are not going to be in the limelight forever,” Jodi said.

Launched via a soft drink commercial, Jodi Santamaria, popularly known by her screen name Jodi Sta. Maria is steadily trekking a viable career in show business.

It might be fate which brought Jodi her chance to act on TV and the movies. She was discovered by a talent scout while eating in a fast-food restaurant in Buendia. And the rest is history.

In spite of her busy showbiz career, Jodi still leads a normal life by finishing her studies. She’s aware that showbiz is not a permanent job, and would be nice to have a fallback when she decides to retire from show business. Recently, she graduated from college at Southville International School with a degree in Bachelor of Science in Psychology at the age of 39. “Remember, it’s never too late, and you are never too old to reach your stars,” she posted on Instagram.

In person, Jodi exudes confidence and cheerfulness, a window to her positive outlook in life. Jodie Chrissie Sta. Maria, in real life, is the youngest of two siblings. She grew up in Cabrera, Pasay.

She keeps her svelte figure by working out “whenever she feels like it.” If she couldn’t go to the gym she just does sit-ups at home to maintain a flat tummy. She looks blooming these days, reflective of her happy personal life. At present, Jodi’s boyfriend is actor Raymart Santiago.

Satisfying Dining Experience

Aside from the comfortable rooms, one can always look forward to the delicious food being served at Café Ecija Restaurant and Bar, located in the lobby. It is ready to serve a sumptuous buffet for breakfast and an all-day a la carte menu every day featuring Filipino and international dishes. It has a 76-seating capacity and is open to in-house guests and walk-in diners daily from 6:00 a.m. to 10:00 p.m. An outdoor swimming pool is just right outside Café Ecija.

During our visit, Chef  Lester Bergado, the affable in-house chef of Harvest Hotel happily served to us the dishes he prepared for our photoshoot. He shared that they have added more Pinoy comfort food to the menu. Aside from the regular Salmon Head Sa Miso and Hipon sa Kamatis, additional dishes are the all-time favorites, such as Kare-Kare, Caldereta, Pininyahang Manok, Pork Lechon and Harvest Sinigang Beef Buko.

The Experience team was also lucky to have tasted the Friday Feast of the World Buffet with choices ranging from salad, cold and hot appetizer, soup, grilled, hot dishes, and dessert. For the salad, they served Mixed Green Salad with Croutons, Parmesan, corn kernels, tomato, Onion, Cucumber, Capsicum, and Bacon. For the dressing, choices were Caesar, Thousand Island, and Italian Dressing.

Cold and hot appetizers were Assorted Maki Rolls and Mixed Cold Cuts; Crispy Pork Belly infused in Chili jam and Eggplant Parmigiana with Cheese Sauce. For the soup, it felt calming to have tried Seafood Shabu-Shabu and Tuscan Tomato Soup. From the carving station, we surely tried the Slow Roasted Beef Short Plate with Wild Mushroom Sauce; and the grilled Beef, Pork, Chicken, Fish, and Sausage. Happy tummy, indeed!

For hot dishes, they served Asian Beef Kofta in Sour Cream Sauce, Hainanese Chicken, my favorite Phad Thai, and Shanghai Fried Rice. For the Western offering, they prepared Pork Escalope with Peppercorn Sauce, Seafood Gnocchi, Vegetable Polonaise, and Mushroom Risotto Rice.

Choices for dessert vary from Crème Brule Shots, Panacotta Shots, Chocolate Bar. There were also Marshmallows, Breadsticks and Wafer stick at the Chocolate Fountain Station.

Our gastronomic experience didn’t end at the buffet station. There were also additional plated dishes served for our feature and consumption. We tried BBQ Baby Back Ribs, a Texas-style smoked BBQ baby back ribs served with buttered corn, coleslaw, and French fries. Followed by Beef Kare-Kare, slow-cooked ox tripe, beef chunks, and tropical vegetables simmered in Filipino-style peanut sauce served with famous bagoong. For the beverage, they offered us to try the Harvest Potion and Winty Citrus Dew.

I had a fill of Adobong Pusit, a Classic Filipino Adobo dish where sliced squid is cooked in vinegar, soy sauce, garlic, ginger, onion, and tomatoes. I must say this was my favorite from among the dishes served to us. I always crave Adobong Pusit since this is seldom prepared at home.

The Seafood and Aubergine Salad in Turmeric and Cider Reduction, was by far, what Chef Lester has recommended. Seeing the assorted fresh lettuce, grilled seafood, and aubergine with reduction of turmeric and cider vinegar in an ensemble made it an irresistible dish to try. 

As a finale, one not to miss the appetizing desserts – a choice of Choco Cream Cake, a Black Forest cake filled with chocolate ganache; and Sans rival, a layered meringue cake with buttercream and chopped cashew nuts.

All in all, it was a satisfying hotel experience made truly special by meeting the hotel owners themselves while enjoying the night away with friends. The team even had a jamming session with Leo Pisces Duo’s band playing that night.

His legacy will live on

National Artist for Visual Arts Arturo Luz passed away peacefully on May 26. He was 94.

Arturo Luz, painter, sculptor, designer, and esteemed Philippine National Artist in the visual arts passed away Wednesday night, leaving behind a legacy in the arts that “exemplify an ideal of sublime austerity in expression and form.”

His daughter, former TV personality, Angela Luz, announced that the 94-year-old artist passed away peacefully while she was at his side at 8:45 pm on May 26.

“God blessed my father with 94 of the most wonderful years on earth. He enriched our lives with his art, his incredible talent, and his genius. As a father and a grandfather, he was simply the best. He was the most kind and generous human being. And as a husband to my mother, he was perfect. He will be terribly missed, but will never be forgotten. His legacy will live on, and will last forever,” wrote Angela on her Facebook post.

Luz was born on November 20, 1926, and was a founding member of the modern Neo-Realist school in Philippine art. He was educated at the University of Santo Tomas School of Fine Arts in Manila, and then went on to the Art School of the Brooklyn Museum in New York, and to the Académie Grade Chaumière in Paris. He became the director of the Metropolitan Museum of Manila in 1976, holding the position until 1986. He was named National Artist in 1997.

Luz’s notable works include the Carnival series of the late 1950s to the recent Cyclist paintings.

Among his other significant paintings are Bagong Taon, Vendador de Flores, Skipping Rope, Candle Vendors, Procession, Self-Portrait, Night Glows, Grand Finale, Cities of the Past, Imaginary Landscapes.

His mural painting Black and White is displayed in the lobby of the CCP’s Bulwagang Carlos V. Francisco (Little Theater). His sculpture of a stainless steel cube is located in front of the Benguet Mining Corporation Building in Pasig.

He produced works that elevated the Filipino aesthetic vision to new heights of sophisticated simplicity.

He established the Luz Gallery that professionalized the art gallery as an institution and set a prestigious influence over generations of Filipino artists. He inspired and developed a Filipino artistic community that nurtures impeccable designs.

Your tropical island getaway

There were so many places in the past that I wished I could go back to. One of those was Boracay Island where I have experienced its pristine beauty in its heyday.

The white and powdery sand, which with the almost azure color of the ocean and palm trees provided a beautiful combination and a sense of being in paradise. I was saddened when its natural allure got damaged, characterized by filthy water and environmental issues. Following the recent six-month closure of the island, I was delighted to be back to this idyllic nirvana.

Welcome to Boracay!

Upon arrival at the Caticlan-Boracay Airport, we were escorted to Caticlan port where a boat whisked us to Boracay island. In less than 30 minutes, we reached the last port where a shuttle service took us directly to Movenpick Resort & Spa Boracay, our gracious, upscale resort host for this trip.

The tropical beachfront paradise nestled at Punta Bunga Cove has reopened to guests to experience this exquisite destination’s newly-restored magnificence.

Escape Into Indulgence

 

The planned itinerary was light and easy. On day one, we had our sumptuous lunch at Ssäm, which combines innovative Asian cuisine, plus a fresh sushi and sashimi bar. A relaxing break at The Café, a cozy retreat for irresistible cakes, signature sandwiches, teas, coffees, and Chocolate Hour, was enjoyable, too!

Nighttime was made special with a welcome dinner and cocktails at Sol Marina Beach Club hosted by Movenpick’s affable general manager Andre Brulhart and his team, Grace Agatep and Pia De Villa. The seafood dinner was superbly complemented with a happy conversation on sundry topics.

“It is wonderful to be able to welcome guests back to Boracay,” commented Andre Brulhart. “With our private beach on the island’s northern tip, Mövenpick Resort & Spa Boracay did not have the same issues as the rest of the island, but we are happy with the overall impact of the island’s closure. Our amazing team is ready and waiting to provide guests with unsurpassed experiences here in Boracay.”

After dinner, we stayed a bit longer at Sol Marina Beach Club to chill out and soak up the natural beauty of Boracay. It has a nice collection of sun loungers and cabanas – great for sipping cool cocktails and gazing out over the calming seas during the night. A heart-warming catch-up with a former colleague who happened to be on the same trip added fun to our stay.

The next day, we had our breakfast at The Market, a bright and vibrant international restaurant that serves delectable daily buffet breakfasts and global à la carte dishes for lunch and dinner. We then went to the main beach to see how it looks like post-rehabilitation.

We were like kids excited to walk on the beach with its powdery white sand shore and crystal-clear waters. Then, it was lunch at Brezza, which offers authentic Italian cuisine, including the fastest hand-made pizzas on the island, baked in a wood-fired oven imported directly from Napoli (Naples), Italy. It has been nicknamed “The Beast,” accompanied by a wide selection of Italian “aperitivo” and fine wines.

We then headed for a spa treatment at the resort later that afternoon. I opted for the 90-minute Sagay Regenerating Ritual, inspired from sagay (shell) true essence of a protective layer role. Sagay Spa’s Signature Massage incorporates sagay’s richness in calcium that can be absorbed by the body through heat and essential oils, leaving your skin moisturized and smoother.

Best-tasting grilled food was served for dinner at a very exclusive presidential villa of the resort. The night was full of great stories — ranging from alma mater reunion, politics, food, entertainment, and of course, feedback and insights from various people on Boracay re-opening. Brulhart believes that hoteliers have a duty to preserve their destination and create benefits for the entire local community.

Our last day was a “me-time” moment to experience the hotel amenities before flying back to Manila. I felt the comfort of home inside my bright, contemporary-designed room, one of the resort’s 312 rooms and suites, and where I saw the views of the tropical gardens and shimmering sea.

After a morning swim at the spectacular pool, I cooled off at the tropical Pool Bar, with its choice of shady private cabanas and a sunken swim-up bar.

Needless to say, Movenpick Boracay has a diverse collection of F&B outlets to provide outstanding dining experiences, from romantic couples’ meals to fun-filled family feasts and bountiful banquets. Little Birds Club and playground are available also for younger guests.

Event organizers can host unforgettable occasions among several venues, including indoor meeting rooms and outdoor wedding spaces. This and more made my paradise escape an unforgettable experience.

Incorporating Aromatherapy in your everyday life

How a simple thing such as a scent can transport your mind to a happier, calmer state is something that this lady believer of aromatherapy tries to share with other people. 

 Indian-American author and alternative medicine advocate, Deepak Chopra once said that “Aromatherapy is extremely useful. If you want to go to sleep at night, and you have an aroma that calms your mind, it will help you sleep.”

In fact, it’s not only Chopra who believes in the efficacy of aromatherapy. Tina Marie Wise Gamutan, the owner and enterprising young lady behind Tia’s Aromatherapy & Specialty Girftshop has always been fascinated by it and has incorporated it into her life.

“Why to treat a trivial ailment with medicines and chemicals when it can be easily healed by something natural,” she rationalizes. “Don’t get me wrong though! Aromatherapy is not a replacement for mainstream medicine. Please don’t try healing a broken bone with frankincense. Whilst I am an advocate for the ‘natural way’ and I fully support modern medicine too!”

How a simple thing such as a scent can transport your mind to a happier calmer state is something that she tries to share with other people. “The use of aromatherapy oils for stress, skincare, sleep problems, cleaning have been around for thousands of years and it’s all offered to us by Mother Nature,” she quips.

Prior to opening her shop in 2012, she used to work in a corporate office. Together with her best friend, they would dabble in making room sprays to clear the negative aura that tends to linger in such a fast-paced environment.

“We would spend the afternoon eating Japanese food purchased that morning from Cartimar market then we would settle down with our crystals, sage, tarot cards, and our accumulated collection of essential oils,” shares Tina.

She admits that this practice has always been a place of healing for her which is why up to this day she’s still doing it. “We always talked about how my purpose is to help others and now that is exactly what I’m doing through the use of my essential oils,” she shares.

Two years ago she became pregnant and got conscious of the things she would put in her body. Luckily, she had a smooth pregnancy apart from the terrible acid reflux. She admits to being extremely wary about purchasing over-the-counter medicine so she turned to peppermint oil and used it in a diffuser.

“I literally can’t live without it now,” she quips. “During my pregnancy, I had a lot of spare time so I started making my sprays again and selling them among friends. The sprays soon turned into soap making, massage oils, beauty products, and candles.”

By this time, she was sitting at home heavily pregnant and every surface had some sort of aromatherapy product on it. This is when she decided to open her own wellness shop.

Benefits medicinally: This oil has been found to eliminate harmful bacteria, it can relieve muscle spasms and disinfect and soothe inflamed skin.

Benefits when used in Aromatherapy: It has natural expectorant properties which aid in clearing the nasal passage and receives congestion. It is also believed to soothe feelings of nervousness and enhances focus.

How to use:

-Dilute with virgin coconut oil and rub on soles of feet for a natural fever reducer or use it to relieve sunburn. You can also rub it behind the ear to reduce feelings of nausea

-Inhale to relieve the symptoms of headache

  • What is it? Lavender Oil

Benefits medicinally: Known for eliminating bacteria, soothe inflamed skin, relieves muscle spasms, soothes bug bites, and speeds up healing of irritated and scarred skin.

Benefits of Aromatherapy: It has mild sedative properties so it is known for reducing stress by lowering cortisol levels. High cortisol levels have a direct correlation to lower immunity therefore lavender essential oil supports the immune system by reducing feelings of stress.

Due to these calming properties, you can use lavender as a sleep aid especially if you suffer from insomnia. This super oil also has anti-fungal, anti-bacterial & anti-microbial properties.

How to use:

  • Use in a diffuser so the particles can be inhaled more effectively
  • Dilute with a carrier oil and use topically. Can be used as a moisturizer or help to relieve insect bites.
  • Provides soothing relief to minor burns and cuts

  • What is it? Tea Tree Oil

Benefits medicinally: This oil is a powerful antiseptic immune system stimulant that is beneficial in eliminating bacteria, viruses, and fungi. It can be used in cosmetics, household cleaning, aromatherapy. It is known to soothe topical allergic reactions, burns, dandruff, acne,  and much more. Used topically Tea Tree oil can heal skin issues making it an excellent additive when making homemade beauty products such as soaps, toners, face washes, body washes.

Benefits in Aromatherapy: Tea Tree has natural expectorant properties so applying a few drops to a pillow can relieve congestion. You can also add a few drops of this oil to a steaming bowl of water and inhale deeply to aid the healing of a sinus infection.

How to use:

  • Dilute with a carrier oil of your choice and use topically. You can use it on burns, cuts, sores, rash
  • Tea tree has the potential to restore the skin’s complexion so dilute with aloe vera and distilled water and use a facial mist. You can also use it in your hair to fight dandruff or lice.

 Home to many Ubi farmers

One of the attractions in Bohol is the yearly “Ubi Festival,” which has been celebrated since the year 2000, is proof of the Boholanos’ love for Ubi or purple yam.

The root crop was revered as a “savior crop” as its discovery led to the alleviation of hunger in the province during pre-Hispanic times. Now, it has become a staple food for Boholanos because of its taste, long shelf-life, and the many food varieties that can be made from it.

As the largest producer of ubi in the country, Bohol is home to many ubi farmers who turn to the root crop for their livelihood. The recent festival theme revolved on “Pagpananum ug Ubi Napuslan, Kagutom Na Dala Sa Covid19 Nabatukan,” which aimed to celebrate the root crop that has become an agro-historical-geographical-religious symbol for the province and highlight the impact and contributions of ubi farmers.

A variety of Ubi products like ube jams and ube-based bibingka, ice cream, and bread were showcased at the festival.

There is only a viewing deck from where you can enjoy the extraordinary landscape. Bear in mind that the viewing deck is accessible only by stairs and temperatures can be very warm from time to time. Generally, visits to the hills are brief ones as there is no other activity besides viewing them.

Interestingly, they are covered in green grass that turns brown during the dry season, for this reason, that it was called for that name. The Chocolate Hills are the Philippines ’ third National Geological Monument. It was also submitted to be a UNESCO World Heritage.

  • Tarsier Sanctuary

 The Philippine Tarsier Sanctuary, a place dedicated to saving the lives of endangered tarsiers, is also open for those who want to learn more about these small nocturnal primates.

A Holy Week reflection: Listening in the stillness

“Be still and know that I am God; I will be exalted in the earth.” – Psalm 46:10

Twenty years ago, I received a birthday present from an editor friend that I treasure up to this day. It was a small book titled “Women on the Journey: Devotions for Women,” which contains a magnificent compilation of rich experiences candidly shared by women, to women; stories about their real-life situations – struggles, trials, and triumphs – and life lessons that truly touch and instill.

Their stories are a form of blessings from which we can draw valuable insights to help us in our own journey.

This Holy Week, while having my quiet moment at home, I inadvertently open this tiny book and reflected on the topic “Listening in the Stillness.” It was a relief to calm myself down from shock after hearing the passing of a dear friend on a Good Friday.

Here is an excerpt from the book:

“Have you ever reached a point when you felt so tired you were ready to give up on life? Have you ever felt that you were a victim of a vicious cycle of despair and frustration? Are you going around in circles, not knowing where you are headed?

In Psalm 46:10, God invites us to stop for a while. God invites us to let go of our struggles and remain in His presence. He wants us to know Him and His love in the nakedness of our souls.

‘Our awareness of God is a syntax of the silence in which our souls mingle with the Divine, in which the ineffable in us commune with the ineffable beyond us.

It is the afterglow of years in which soul and sky are silent together, the outgrowth of accumulated certainty of the abundant, never-ending presence of the Divine.

All we have to do is to let the insight be and listen to the soul’s certainty of its being a parenthesis in the immense script of God’s eternal speech.’” (Heschel, A.J).

Do not let the noise of this world drown out the voice of God.”
